Fig tarte


A quick follow up to yesterday's post- I decided to go with Giada's recipe. It has all the right ingredients: figs, honey, almond paste, and mascarpone (which on its own is simply amazing, so smooth with a touch of sweetness) and its a breeze to make. The hardest part was getting the mixer out of the closet. You first prep the dough so it can rest in the fridge for an hour, prior to rolling it out, you make the paste and finally cut the figs and layer it all. The only addition I made was adding some almond extract to the pastry dough as well as a tablespoon of brown sugar.  Also, next time I would make the filling by hand, the mixer didn't seem to mix it quite right. The tarte is in the oven and hopefully ready by the time our guests arrive.
