Egg salad for the next week

Will you be eating eggs for the next week?  If you are anything like us, you will have plenty of hard boiled eggs in your fridge.  My favorite thing is to make a delicious egg salad sandwich with left over Easter eggs.  I usually add a little mayo, mustard, salt &pepper and some freshly chopped onion. However, I came across this recipe and the addition of tarragon with hard boiled eggs sounds delicious.

2 Eggs 

1 tablespoon Mayonnaise or Homemade Aioli
1 tablespoon Fresh Tarragon - chopped 
Salt & pepper
2 Slices of good bread
1 Handful of Arugula
