Baking with the baby lady



Today we made citrus cornmeal shortbread cookies and they are delicious.  The recipe is very straight forward and  the batter can be ready in as little as 15 minutes with the exception of chilling the dough which takes about 1 hr.  The recipe calls for a tiny little bit of yellow cornmeal in the cookie dough recipe, and some more cornmeal is used to roll the cookie in right before baking. This adds a really nice texture to the already sandy cookie.  I can't wait to bake some more of these cookies- they go perfectly with a warm cup of coffee, morning, day and night.
